How many times have you made or bought a large vegetable tray for a party? What happens to the left overs? Do you throw them out? Stick them in a plastic bag for a few days, and then throw them out? Well, that stops here and now. Turn it into a soup!
- left over raw vegetables
- 2 tbs butter
- 2 cloves of garlic
- salt and pepper
- 1 tsp thyme
- 1 tsp sage
- 1 tsp parsley
- 2 bay leaves
- chicken broth (enough to cover the vegetables in a pot)
- 1 cup of whole milk
As you can see by the picture, I had a variety of veggies left 0ver; green onion, sweet pepper, red onion, broccoli, and celery. Simply heat the butter in a large pot. Add the veggies and cover them with chicken (or vegetable) broth). Bring to a boil and then lower to a simmer for about 15 minutes.
Now I used a submersion handheld blender, so I didn’t have to let the mixture cool. I blended it right in the hot pot. If you don’t have one, let the mixture cool and then place it in a regular blender. Pour the soup back into the pot and add the milk. Cook a few more minutes to heat through. That’s it! You are done. It’s healthy, fast and delicious.
This would go nicely with a grilled cheese sandwich or some toasted crusty garlic bread. Either way, never throw away those vitamin packed vegetables again.
