Super Simple Spinach Scramble

This recipe is proof that you can make a vitamin-packed super simple breakfast in under 15 minutes! I used the leftover spinach (from my spinach quiche the other day) and added a few ingredients and it really was so simple.

Ingredients:

  1. 8 oz cooked chopped spinach
  2. 2 eggs
  3. palmful of mozzarella cheese
  4. palmful of grated parmesan cheese
  5. salt and pepper to taste
  6. sprinkle of red pepper flakes (or any other herbs you like)
  7. mushrooms and/or onions (optional)

Recipe:

This is so simple it’s a stretch to call it a recipe, but here goes. Put a pat of butter in a non stick skillet and heat to medium/low. Add the spinach, salt, pepper, and any other herbs (oregano or basil would work well). Toss in the parmesan cheese. Add the scrambled eggs and let cook until it starts to set. Top with the mozzarella cheese and cover to melt.img_0153

Scramble and cook a few minutes until the egg is cooked through. That’s it! Serve it with sliced fruit (I chose an orange), and enjoy. This beats the drive through luke warm breakfast sandwich on your way to work any day of the week. You can see the heat coming off the spinach in the picture below. Try it.
